By the way, sometimes, it feels like only yesterday that my family and I started on our veggie-loving path. It’s been more than a handful of years now, and wow, has the time ever flown. It’s true what they say; time flies when you’re having fun!

Anyhow, a few years back, when we first started following a veggie-loving lifestyle, I recall scampering through grocery stores looking for anything and everything labeled vegan. 

Now, as I look back, I wonder what we were thinking. Before going vegan, I’d always loved to cook. My family and I had rarely depended on pre-cooked or packaged type meals.

But I’m thankful for those early days of discovering the massive variety of foods available to those wishing to avoid eating meat and dairy! There are plenty of options for vegans out there, folks – lots of them. And like everything packaged, some products are healthier than others. My family and I especially appreciate one or two brands like Enjoy Life, Kite Hill, and Amy’s, all of which offer convenience foods that have helped us out multiple times.

So why all of this reminiscing about packaged vegan foods? Well, we’ve got a challenge for you!

To Peel or Not to Peel the Carrots for Vegan Carrot Hot Dogs; That is the Question!

To peel or not to peel is a question that came up while testing out gluten-free marinades for this recipe. What we conclude is that peeling is entirely up to the eyes of the beholder. We’d been concerned that if we skipped peeling the carrots, we’d perhaps limit the saturation capabilities of the marinade. As it turns out, that was pretty much a non-issue.

But when you peel your carrots, you do lose some of the surface texture and lines that we found rather interesting. The peeling practically looks like traditional hot dog casing when left in place.

If you decide to leave the peeling on the carrot, be sure to wash and scrub them thoroughly.  

On a personal note, on occasions when we cannot find organic carrots, we wash them and then peel them, no questions asked. When we are preparing organic carrots, we almost always clean them but leave the peeling intact.

How About An Easy Marinade to Make Carrots Taste Like Hot Dogs?

After only a few months of enjoying a plant-based vegan lifestyle, we found this one thing to be true – it’s nearly always about the sauce! That’s most certainly the case with this easy marinade and the secret coleslaw gets its flavor from the dressing in the crazy-good slaw recipe, too!

Sauces, seasonings, and marinades are the flavor masters, meaning, it is they that hold the keys of all cooking. Plant-based food is no exception other than rather than covering up the food we’re seasoning; it’s more of a celebration! 

Now that makes our hearts go pitter-patter much like that bunny tail we mention above – how about you?

Let’s get into talking about what you need to make an incredibly easy marinade that’s not only refined oil-free, but gluten-free, too.  

If you happen to follow a gluten-free diet – that’s excellent news to you. So many packaged sauces and seasoning have gluten in them as thickeners and such. 

The other surprising little fact about this marinade besides that it’s gluten and oil-free is that it taste like hot dogs. I kid you not – this marinade holds hotdog magic. It smells like hotdogs, (in this case, that’s a good thing) and it makes carrots, c a r r o t s taste like traditional hot dogs rather than carrots on a bun! It’s nuts!

We tried a whole bunch of combos, and this one, right here, no matter what any other recipe might suggest, is the tastiest! Better still, it is so tweakable! If you like things a little hotter, add a bit more pepper. Is tartness your thing? If you like something a bit tangier, amp up the Dijon mustard.

The first time you make it, though, taste as you go and follow the recipes as closely as possible. When you do, you will find yourself in vegan hot dog heaven!

So what you will need for the marinade are ingredients you probably already have in your pantry or fridge. And don’t get worried about the number of components as this saucy little number comes together in minutes.

How to Make Our Easy Carrot Dog Marinade

To make the most excellent and easy hot dog marinade you’re ever tasted, combine the following ingredients in a blender, food processor, or an immersion blender mixing cup and blend until smooth. (Precise measurements provided in the recipe below.)

Easy Marinade Ingredients:

tamari sauce or soy sauce or liquid aminos

apple cider vinegar 

vegetable broth or water

tahini  – It makes all the difference!

pure maple syrup or another sweetener

liquid smoke

Dijon mustard or another prepared mustard

onion powder

garlic cloves or garlic powder

brine from your favorite pickled pepper, or pickle juice or more vinegar

How to Make Crazy-Good Slaw (Secret Coleslaw) for Your Slaw Dogs

First, if all, if you happen to have a crazy-good slaw or prized secret coleslaw recipe that you adore, by all means, make a batch to top off your grilled carrot dogs. But if you want to try the best ever secret coleslaw, or crazy-good slaw, as we like to call it,  that will knock you veggie carrot dogs out of the ballpark, then do try our crazy-good secret coleslaw recipe!

(Secret) Crazy-Good Coleslaw Ingredients:

green cabbage
red onion
organic unrefined coconut sugar or another sweetener
apple cider vinegar
the juice of one lemon
crushed fennel seeds
pink Himalayan salt, or another salt to taste
fresh cilantro leaves
an optional fennel slices and a few fronds for garnish

To make our crazy-good slaw, we pour hot water over the prepped cabbage, drain, and then rinse again with cold water. You don’t have to do this step, but it adds a tiny bit of tenderness and moisture.

Then we combine the rest of the ingredients and taste, taste, taste before stirring the cabbage into it along with the remaining ingredients. The longer your crazy-good slaw sits, the more the cabbage and other veggies absorb flavor from the dressing.

See, so once again, the real flavor is all about the dressing, seasoning, marinade, or sauce.

How to Cook Carrot Dogs on the Grill for Tailgating, Picnics, and Cookouts!

Casey’s Corner is an iconic quick stop dining experience in Disney’s Magic Kingdom featuring favorite baseball park food favorites and beverages. And guess what? Now Casey’s Corner offers a vegan hot dog option complete with a slaw dog topping if you like! No, it’s not exactly the same as our crazy-good slaw (aka secret coleslaw) – but Casey’s reputation is pretty darn good!

The vegan hot dog at Casey’s Corner uses a plant-based processed meat alternative made by the company,  Beyond Meat. They’re a delicious vegan option when you’re visiting the parks, and they’re becoming more popular by the day.

By the way, word has it that Disney is currently incorporating plant-based alternatives in every venue menu. And many of the various restaurants in the parks and resorts are also including plant-based menu options.

Inspiration for this Dish: Slaw Dogs at “The Varsity” in Atlanta

The Varsity, located in Atlanta, Georgia, is where we first tasted a slaw dog. Mind you, our first slaw dog experience was back in the days before we were following a plant-based lifestyle. Still, it was their slaw dog all of those years ago that inspired our authentic tasting veggie dog version.

And most importantly, the lite seasoning of the slaw at The Varsity , inspired the flavors we wanted in our secret coleslaw. On that secret coleslaw note, I want to take a second and share why The Varsity is a wildly fun place to visit, vegan or not.

Eating at The Varsity was quite a memorable experience. It’s a retro outfitted walk-up order type of diner, but that’s not that uncommon. Where it differentiates itself is when it comes to ordering.

To place your order, you walk up to a counter where you yell your order. That’s right, you pretty much bark your order, and you need to be quick about it as there’s no patience for indecision either. It’s loud. It’s a riot.

If there were a vegan dining option at The Varsity, we’d stop back by for old times’ sake, but so far, there’s not. If you are vegan at The Varsity, you’ll be happy to know that they do have onion rings, fries, and of course, a humble side salad.

But aside from lack of veggie-loving options at The Varsity, Atlanta is still one of our favorite destinations for a getaway filled with vegan dining options. Atlanta has everything from juice bars and ice creameries with gluten-free and dairy-free delights to casual restaurants and full-on fancy, time to be impressed, plant-based dining.

All in all, Atlanta is a pretty cool city that offers fantastic museums, a gorgeous arboretum, hiking trails, excellent concert venues, and of course, incredibly delicious vegan food around every bend. Check it out when you have the chance.

Vegan Carrot Hot Dogs with Crazy-Good Slaw

Cook some carrots and make some slaw – who knew a plant-based vegan show-stopping cookout dish could be this easy?  When you bring these carrot dogs to your next barbecue or picnic – everyone will want to try one. So make plenty and  get ready to share some veggie love!  The easy marinade described in this recipe easily seasons at least a couple pounds of carrots.  We like to serve our carrot slaw dogs on lightly toasted gluten-free buns, smeared with our homemade cashew mayo or sunflower seed mayonnaise and topped with the excellent fennel coleslaw described in the instructions below. And for dessert, might we recommend whipping up a quick batch of our chocolatey black bean brownies with pistachios?

Ingredients

  • a bunch or two of carrots, washed, trimmed, and sliced - Quantity and peeling are each to preference.  When we have organic carrots on hand, we don't often bother to peel them. When using non organic produce, we wash first and then peel using this peeler.
  • For the CRAZY-GOOD SLAW: 1/2 head of green cabbage, cored and very thinly sliced or shredded to equal about 4 cups
  • 1 1/2 tsp organic unrefined coconut sugar or another unrefined sweetener - Here's a link for a bulk buy deal on organic unrefined coconut sugar that's like getting one bag free! Date sugar or pure maple syrup or unrefined agave would also work well.
  • 1 tbsp of apple cider vinegar
  • the juice of one lemon
  • 1 tsp of crushed fennel seeds - Here is a bulk deal on whole organic fennel seeds.  Did you know that fennel is thought to be beneficial to digestion?
  • a pinch of pink Himalayan sea salt, or another salt to taste
  • 1/4 of a medium red onion, peeled and sliced into thin half-moon slivers
  • a fist's worth or about 1/4 cup or so of chopped fresh cilantro leaves
  • an optional 1/4 cup of fresh fennel slices and a few fronds for garnish - We say it's optional, but in truth, it's the fennel that makes this slaw so amazing!
  • For the CARROT DOG MARINADE: 1/4 cup of tamari sauce, Braggs Liquid Aminos, coconut aminos, or soy sauce - We use tamari, Braggs, or coconut aminos to avoid gluten. If gluten is not an issue, soy sauce works well in this recipe.
  • 1/4 cup of apple cider vinegar - We use Braggs organic ACV with the mother.
  • 1/2 cup of water or vegetable broth
  • 3 tbsp of tahini 
  • 2 tbsp of pure maple syrup, date paste, raw agave, or unrefined coconut sugar - Our first choice is pure maple syrup as the liquid sweetener for this recipe.
  • 1 tbsp of liquid smoke
  • about 1 tsp of prepared Dijon mustard - Any mustard you enjoy will work.
  • 3/4 tsp of onion powder, more or less to taste
  • 1 or 2 cloves of garlic, peeled and chopped fine 
  • 1 to 2 tsp of brine from your favorite pickled pepper, pickle juice or alternatively, possibly add a dash of any tasty vinegar or vinegar based hot sauce

Instructions

  1. FOR the CRAZY-GOOD SLAW: Pour hot water over prepped sliced or shredded cabbage, drain, and then rinse with cold water and drain.
  2. Then, in a large mixing bowl, combine the coconut sugar or another sweetener, apple cider vinegar, lemon juice, crushed fennel seed, and salt. Taste and adjust to preference while keeping in mind that this tasty dressing is going to season your entire batch of slaw. (BTW - that's a subtle way of saying go big or go home. Under seasoning is a huge mistake, especially when it comes time to get your cookout on!)
  3. Next, place the rinsed and drained cabbage into the bowl with the dressing. Add in the onion, fresh cilantro, and highly recommended, fresh slices of fennel.  Use this slaw to top your grilled carrot dogs.
  4. How to Cook Carrot Dogs on the STOVETOP: First, trim your clean carrots so that they're of similar size and traditional hot-dog length. Using a pot large enough to hold the amount of carrots you plan to cook, add the trimmed carrots and enough water to cover the tops.  Boil briefly, or until your lovely carrots are barely fork-tender.   We cook ours for about ten or so minutes, max. It's important to avoid overcooking since they'll eventually hit the heat again on the grill.
  5. While the carrots are cooking, stir together or blend all of the ingredients for the hot dog marinade. To save time and the cleanup of using a blender, we often use an immersion blender like this one when combing small amounts of sauce or marinades.
  6. Using a colander, immediately drain and rinse the barely tender cooked carrots with cold water. Then, once they're rinsed and cool, place the carrots in a ziplock freezer bag along with the Easy Carrot Dog Marinade and marinate for at least four hours or so or overnight or even longer, like days ahead. If doing an extended marinade, be sure to keep them refrigerated.
  7. We like to grill our thoroughly marinated carrots on a prepared hot grill as you would any quick-cooking type of veggie hot dog - cooking just long enough to add grill marks and char to preference. Depending on your grill, you may want to oil the grill rack before adding your carrots though this step is not required.  If you prefer not to grill simply warm your carrot dogs in the oven or microwave, just until hot.
  8. How to Cook Carrot Dogs using an INSTANT POT:  Marinating and cooking your carrots in an Instant Pot, like this one, reduces the amount of marinating time dramatically, getting you to the grilling part sooner. Place the trimmed, prepared carrots along with the Easy Carrot Dog Marinade in an Instant Pot. Attach and lid according to instructions, close the pressure valve, and set to cook for three minutes.
  9. Once the pressure rises and the three minutes of cooking time completes, carefully manually release the pressure according to the manufacturer's instructions. You may leave the cooked carrots in the pot until you are ready to grill or until they've cooled for storage in the fridge for later use. Optionally, you may also enjoy a delicious carrot dog straight from your Instant-Pot and skip the grilling.

Notes

  • Cook time varies depending on if you use stovetop or Instant Pot - but once your precooked carrot dogs have soaked in the marinade a bit, your dogs are ready to be grilled up in minutes!
  • Allowing the carrots to marinate for about an hour after cooking when using an Instant Pot allows additional flavor to absorb into the carrots, which is the way to go. The same is true of the stovetop method - the longer you allow your carrots to marinate, the deeper the smoky hot dog flavor.
  • Carrot dogs cooked on the stovetop or in an Instant Pot can be made ahead and stored for future use. If you're not planning to grill immediately after pre-cooking your carrots in an Instant Pot, once the cooked carrots have cooled completely, remove the carrots and marinade from the Instant Pot and store together in a covered container in the fridge. Additional marinading time only strengthens the flavor.
  • If you do not have fresh garlic cloves, it's almost always okay to sub in some garlic powder in its place.  This is a bulk buy deal we found for organic garlic powder from a reputable brand - we like having plenty of garlic on hand.
